In December 2007, our butcher shop failed a surprise health inspection conducted by the Medical Unit and was temporarily closed. Following an inventory count and a financial audit of the operation, we discovered ACSA was losing money by processing meat on site. After careful consideration, the ACSA Board of Directors decided to permanently cease on-site meat processing operations.
After researching several alternatives, ACSA began outsourcing the butchering of U.S. imported meat to Western Wholesale Meat Company where all work is done by hand using traditional English recipes and techniques. The company is run by a British Master Butcher, Wayne Faulkner-Harper. Wayne trained as a Master Butcher in the UK and ran his own butcher's shops there until he sold out a number of years ago. During a visit to Thailand, he decided to stay and since then has been training and mentoring an untold number of Thai butchers. He also provides his consulting services to improve Thai standards in butchering as well as raising beef.
